Bacon Wrapped Pork Medallions

One of the best perks of keto, if you ask me! ​

In this case, Bacon Wrapped Pork Medallions. This is a great option for a mid-week, easy prep meal. I love it with a side of parmesan broccoli.

Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes

Ingredients

  • 1 lb Pork tenderloin, cut into 8 medallions
  • 8 slices Bacon
  • Salt
  • Pepper

Directions

  1. Preheat oven to 400F.
  2. Partially cook the bacon in a large skillet until it’s about half-cooked. *Don’t toss the bacon grease, it’s used in step 6!
  3. Meanwhile, season the pork medallions with salt and pepper on both sides. (You can also add whatever herbs or spices you’d like here, rosemary or sage are great options.)
  4. When the bacon is done, wrap each medallion with a piece of bacon, using a toothpick to secure it.
  5. Heat a cast iron skillet on the stovetop on high heat.
  6. Once hot, place each medallion into the skillet and spoon a bit of bacon drippings over each medallion.
  7. Bake in the oven for 15-20 minutes.
