Bacon Wrapped Pork Medallions
Ingredients
- 1 lb Pork tenderloin, cut into 8 medallions
- 8 slices Bacon
- Salt
- Pepper
Directions
- Preheat oven to 400F.
- Partially cook the bacon in a large skillet until it’s about half-cooked. *Don’t toss the bacon grease, it’s used in step 6!
- Meanwhile, season the pork medallions with salt and pepper on both sides. (You can also add whatever herbs or spices you’d like here, rosemary or sage are great options.)
- When the bacon is done, wrap each medallion with a piece of bacon, using a toothpick to secure it.
- Heat a cast iron skillet on the stovetop on high heat.
- Once hot, place each medallion into the skillet and spoon a bit of bacon drippings over each medallion.
- Bake in the oven for 15-20 minutes.
