Keto Chocolate Mousse
Ingredients
- 100g Lily's Extra Dark Chocolate 70%
- 1 1/4 c Heavy Cream
- 1 Large Egg White
- 1/4 c Swerve, confection
- Lily's Dark Chocolate Chips (optional)
- Heavy Cream (optional)
Directions
- Chop up the chocolate into small pieces and set aside.
- In a small saucepan, heat half of the cream until it just begins to boil.
- Turn off the heat and add the chocolate pieces, stirring until the chocolate has melted and smooth.
- Set a mixing bowl in a larger bowl filled with ice.
- Pour the chocolate mixture into the mixing bowl and beat to soft peaks using a handle electric whisk or mixer. Remove bowl from the ice water.
- In a separate bowl, whisk the egg with the mixer until stiff peaks. While mixing, add the swerve a tablespoon at a time, and continue whisking until you get a soft meringue.
- Gently fold the meringue into the chocolate mixture.
- Spoon or pipe the mousse into chilled serving glasses and refrigerate for at least an hour.
- Just before serving, whip up some more cream and top with a few chocolate chips (or whatever keto-friendly topping your heart desires!)
