Keto Chocolate Mousse

Decadent chocolate mousse that is sure to impress even the most keto-skeptical folk!

Ingredients

  • 100g Lily's Extra Dark Chocolate 70%
  • 1 1/4 c Heavy Cream
  • 1 Large Egg White
  • 1/4 c Swerve, confection
  • Lily's Dark Chocolate Chips (optional)
  • Heavy Cream (optional)​

Directions

  1. Chop up the chocolate into small pieces and set aside.
  2. In a small saucepan, heat half of the cream until it just begins to boil.
  3. Turn off the heat and add the chocolate pieces, stirring until the chocolate has melted and smooth.
  4. Set a mixing bowl in a larger bowl filled with ice.
  5. Pour the chocolate mixture into the mixing bowl and beat to soft peaks using a handle electric whisk or mixer. Remove bowl from the ice water.
  6. In a separate bowl, whisk the egg with the mixer until stiff peaks. While mixing, add the swerve a tablespoon at a time, and continue whisking until you get a soft meringue.
  7. Gently fold the meringue into the chocolate mixture.
  8. Spoon or pipe the mousse into chilled serving glasses and refrigerate for at least an hour.
  9. Just before serving, whip up some more cream and top with a few chocolate chips (or whatever keto-friendly topping your heart desires!)
