Keto Dinner Rolls

So many bread alternative recipes out there end up tasting too eggy, at least in my opinion.
I finally figured out a recipe that I can enjoy the same way I used to enjoy bread though! These are so great, even carnivores will be surprised that they're keto. Servings: 6 Prep time: 15 minutes Cook time: 15 minutes Total time: 30 minutes |
Ingredients
- 1 1/2 c almond flour (unblanched)
- 1 Tbsp baking powder
- 2 1/2 c shredded mozzarella cheese
- 2 oz cream cheese, cubed
- 2 large eggs, beaten
Directions
- Prep a baking sheet by lining it with parchment paper, and preheat your oven to 400°F.
- In a small bowl, mix the almond flour and baking powder.
- In a separate, large microwavable bowl, combine the shredded mozzarella and cubed cream cheese. Microwave for 1 minute, stir well, and microwave again for an additional minute. Remove from microwave and stir well until it is completely mixed.
- Add the flour mixture and the eggs to the cheese mix and stir until fully incorporated.
- While the dough is still hot, knead the mixture until it is completely uniform. The dough will be very sticky, but to make it easier to handle you can rub a little olive or avocado oil on your hands before kneading.
- Split the dough into 6-8 portions (depending on how big you want your rolls to be) and roll them each into round balls.
- Place on the prepared baking sheet, and bake for 14-18 minutes until they are golden.
