Deconstructed Skillet Meatloaf
This is one of my favorite keto dishes! It’s become a staple for me because it’s so quick and easy, but incredibly delicious!
Not exactly sure how to best describe it… it came about one night when I was running low on groceries, didn’t want to go to the store, and had to get creative with what I had in my fridge! I call it my Deconstructed Skillet Meatloaf. Servings: 6 Prep time: 15 minutes Cook time: 15 minutes Total time: 30 minutes |
Ingredients
- 1 lb Ground beef (Don’t use lean, go with ground chuck. It’s got the highest fat content)
- 8 oz Mushrooms
- 1/4 c Onion, chopped
- 1-2 Tbsp Butter
- Salt
- Pepper
- 1 Tbsp Italian Seasoning
- 2 tsp Garlic Powder
- 3 Tbsp Keto Ketchup (about 2 tsp per serving as a topping)
- Ruled.me has a great recipe for homemade, or if you’re in a pinch, you can use the No Sugar Added Heinz
- Shredded Mozzarella (optional)
Directions
- Melt a tablespoon or two of butter in a large skillet over medium-high.
- Add the mushrooms and onions, season with salt and pepper, and sauté until tender. Once done, remove from skillet and set aside.
- In the same pan, add the ground beef. Season with salt and pepper, and add the garlic powder and italian seasoning. Cook over medium-high until browned. (Once the beef is cooked, give it a quick taste and then season it to your preferences).
- Add the mushrooms back into the pan and stir well to combine.
- Serve it up, sprinkle on some mozzarella, and give it a ketchup drizzle. Goes great with a simple side salad.
Alternative idea, if you add some tomato paste and a bit of water it becomes more of a meat sauce that goes great served over Miracle Noodles
